Firstly, there should be fine-quality water for brewing tea; secondly, good utensils are needed and finally, it also calls for a comfortable setting.
Water selection
As a popular saying goes, only good water and good tea can produce the perfect flavor. Since there are various comments about the water and tea, they can be summarized as follows.
The view is shared that the water for brewing tea must be sweet, as recorded in the book Tea  by Cai Xiang of the Song Dynasty and Things about Tea by Luo Lin of the Ming Dynasty. Only the sweetness of water may produce amazing tea.
Utensil selection
As the proverb goes, water is the “mother” of tea while teapot the “father” of tea. To get a cup of fine tea, tea, water, fire and utensil are four indispensable elements. Teawares not only serve to contain tea but also enhance the color, aroma and flavor of tea leaves. In addition, an elegant and exquisite teaware also show aesthetic and artistic value. Apart from usability of teaware, its artistic value is also an essential factor for utensil selection.
(1) As China has a vast territory with different customs and practices of tea consumption, the selection of teaware should differ according to local conditions. For instance, people in Fujian, Chaozhou and Shantou prefer Oolong tea consumption with a small teacup, so the four treasures for cooking tea are selected, stove in Chanzhou and Shantou, Yushhuwei(pot), Mengchenguan(purple clay pot) and Ruochenou (small teacup) to best appreciate the amazing appeal of tea.
(2) The selection of teaware by ancients reflect their own social status and identity to a large extent. Innumerable scholars think highly of the elegance of teaware. Su Dongpou, a preeminent writer, designed himself a kind of portable purple clay pot and enjoyed tea on his own a lot when he taught in Yixing, Jiangsu. Additionally, different occupations, ages and genders also require different teawares. The elders pay attention to the aroma and flavor of tea, especially evident in material comfort, which is why teapot is used to prepare tea while young men like to make friends by means of tea parties with refreshing and flavory tea, especially evident in spiritual enjoyment, which is why teacups are used to make tea.
(3) The selection of teaware differs from tea to tea. Those who think highly of artistic value or enjoyment of drinking tea, claiming “teapot add enjoyment to tea consumption while tea enhances arti.stic value of teapot”. In other words, good tea and nice pot are like red blossoms and green leaves, complementing each other. In a general sense, when scented tea is consumed, teapot is used to brew tea that is then poured into porcelain cup so as to maintain the aroma; lidded pot or bowl to prepare tea when black tea or green tea is consumed, focusing on the elegance; purple clay teaware is recommended for sipping Oolong tea; as for drinking black tea fanning and kungfu black tea, porcelain pot or purple clay pot is used to make tea before being poured into white porcelain cup; as for the consumption of precious Longjing, Biluochun, and Junshan Yinzhen tea, white porcelain cup (or glass cup)can be used for preparing and drinking tea.
(4) The selection of teaware should take the three following aspects into consideration: usability, aesthetic value and enhanced tea property. It is a perfect setting with green mountain and clear water, small bridge and pavilion, lyre-playing, chess, calligraphy and painting to consume tea. Such setting usually consists of gardens, buildings and decorations. Any important tea party often requires exquisite indoor decorations and distinctive architectural style. It would be a perfect place to enjoy tea if there was beautiful scenery around.

Tea making process

  1. Pre-heat the teapot: use boiling water to heat the pot before tea preparation so as to remove odors in the pot and to promote the aroma of tea
  2. Put in the tea: as all mouths of teapot are small, tea should be first put in the tea holder that can be passed to guests to appreciate the appearance, then use teaspoon to get tea (1/3 of the pot) down into the pot,
  3. Warm the cups: pour hot water from the pot into the tea pitcher, making the pitcher warm.
  4. Add hot water: pour it over the tea at certain height, let tea tumble and spread in the pot in order to produce better flavor.
  5. Pour the tea: when the tea is poured, the distance between the spout and tea pitcher should be as small as possible to avoid the dispersion of aroma. Normally, it tastes better to mix the first-infusion tea and the second-infusion tea together, so do the third-infusion tea and fourth-infusion tea.
  6. Divide the tea: pour the tea in the tea pitcher into cups with 70% full.
  7. Serve the tea: serve guests with a cup of tea (with saucer)
  8. Smell the aroma: observe the color and smell the aroma before drinking it.
  9. Taste the tea: consume tea in a three-sip manner, look at the tea maker for one to two seconds with smiles indicating the appreciation.
